 Which brings us to our cheese and wine pairing class. Often times when invited to a dinner party, we ask if we can bring something, perhaps a cheese course? The answer is almost always, yes. Then we simply head to our favorite cheese monger and ask for four cheeses - one soft, one hard, one salty and one dealer’s choice.

Our friends at Picnic NM in Santa Fe continue to curate the most lovely farmstead cheeses at their small cheese monger stand at Chomp Santa Fe. For this tasting we have asked Lauren Stutzman at Picnic NM to pick four cheeses to show us how to create and serve the perfect cheese plate and accompaniments to enhance a festive meal.

Lauren has chosen four artisanal cheeses for our tasting, will introduce each, and after creating and serving the cheese plate, guests will taste with 6 French wines chosen by our sommelier for the evening, Greg O’Byrne. Champagne, Burgundy and Bordeaux, how do they pair, what do they make you feel, think about and do? Let’s taste together and talk about it.

Guests will also take home a printed cheese plate guide from Lauren on how to replicate at home or at your next dinner party.
